Because all the nice food usually have high sugar, salt and fat content 🙂 But I think it’s more about we’re accustomed to such level of “taste” and we are presented with less salty it tastes bland and not very nice. The trick is to gradually reduce the salt/sugar/fat content to allow your body to get used to it. Nowadays you can easily find creative recipes to make fabulous food that won’t necessarily be fatty/ sugary/ salty 🙂
