0 Question: why does cheese 'sweat' when its heated? Keywords: cheese, food Asked by sam to Andy, Duane, Giovanna, Katie, Theresia on 13 Nov 2014.
Duane Mellor answered on 13 Nov 2014:
This is the water being driven out of the cheese when it is warmed, at least that is what I think it is. I guess the heat breaks down the solid emulsion and water is released
Andrew Philp answered on 14 Nov 2014:
I’m guessing its because water and oils within the cheese come through pores in the cheese when it is warmed, kinda like how we sweat when hot.
