• Question: why does cheese 'sweat' when its heated?

      This is the water being driven out of the cheese when it is warmed, at least that is what I think it is. I guess the heat breaks down the solid emulsion and water is released

      I’m guessing its because water and oils within the cheese come through pores in the cheese when it is warmed, kinda like how we sweat when hot.
